  1. I wash the meat and cut into slices. In most cases I use pork.
  2. I pour water into a clean pot, put the meat and put it on the stove. I cook on high heat.

  4. I clean the carrots and onions and send them to the pot to cook.
  5. I cook for about an hour. The type of meat directly affects the cooking time. Boil pork and beef for 90 minutes. Chicken and fish - 40 minutes.
  6. Periodically remove the foam.
  7. At the end I put a bay leaf in the pan, add salt and pepper.

Often I serve simple soup as an independent dish. If you add a little greens, a boiled egg and croutons, you get a completely different treat. On its basis, I cook more complex soups using various ingredients.

  • soup set - 1 pc.
  • bow - 2 heads
  • potatoes - 4 pcs.
  • carrot - 1 pc.
  • vermicelli - 1 handful
  • dill, pepper and salt
Cooking:
  1. I carefully wash the chicken soup set. Sometimes use for cooking duck. If I want a less oily soup, remove the skins from the set.
  2. I clean the onion. I pour about 2.5 liters of water into the pan, put the chicken set and a whole onion. I put on the stove. I bring the broth to a boil, remove the foam and reduce the heat a little.
  3. While the broth is boiling, cut the potatoes into strips or cubes.Processed potatoes must be poured with water so as not to darken.
  4. I take the chicken out of the pan, separate the meat and cut it into pieces. As soon as the broth boils for about 10 minutes, I take out the onion and throw it away. I send the potato with chopped meat to a saucepan.
  5. I clean and chop the second onion. After cleaning, I pass the carrots through a grater. Processed vegetables lightly fry in oil.
  6. Add the fried vegetables to the boiling broth and cook for 15 minutes

  2. I wash the wings well and cut them into several parts. I clean the carrots and chop coarsely. I chop the onions and celery after peeling.
  3. Pour the crushed ingredients with cool water, add pepper and salt and send to the stove. After boiling the broth, I cook an hour on low heat, periodically removing the foam.
  4. After cleaning, cut the onion in half rings. I chop hot pepper and garlic.
  5. Medium-sized tomatoes are doused with water and passed through a grater.
  6. In a preheated pan, fry the onions with garlic and hot pepper.
  7. Add tomatoes and carcass for about a quarter of an hour.
  8. I filter the finished broth through cheesecloth, separate the meat from the bones and cut it. Add stewed vegetables to the broth.
  9. I send chopped turkey meat to the pan.
  10. After boiling the soup, add chopped parsley and continue cooking for several minutes. Salt to taste.

Vegetarian Nettle and Sorrel Soup

For cooking vegetarian soup using vegetable broth or water.

I collect nettles of soup in the forest. I do not chase after young leaves, since even large leaves after treatment become soft and soft, and the pungency disappears. In the summer I add some young potatoes and fresh herbs to the soup.

Ingredients:

  • sorrel - 1 bunch

  3. Before cooking potatoes, add carrots and onions to the pan.
  4. I keep nettles in boiling water for a couple of minutes. After it is plentifully doused with cool water, chopped and added to the soup. I cook for about 5 minutes.
  5. Cut sorrel leaves into strips, after cutting off the legs. I send the crushed sorrel to the pot and remove from the heat.

I decided to share a recipe for an unusual mushroom soup. I prefer to cook it from mushrooms, chanterelles or butter, which dry by myself.

Ingredients:

  • onions and carrots - 1 pc.
  • potatoes - 2 pcs.
  • flour, tomato paste, salt and pepper

  1. Soak barley and mushrooms for the night in a separate bowl.
  2. Boil the chicken until cooked, take out the meat, separate from the seeds and cut into slices.
  3. Into the pot with chicken stock spread chopped mushrooms and pearl barley. I cook about a third of the hour until the barley is half ready.
  4. I strain the water in which we were mushrooms, and pour it into the soup.
  5. I cut the potatoes into thin slices and send them to the pan. To the salt.
  6. I fry chopped onion in oil, add carrots and tomato. At the end of frying, sprinkle with flour, mix thoroughly and fry for several minutes.

  4. I send potatoes to boiling water and cook for 5 minutes. Then add carrots with onions.

  • garlic - 2 cloves
  • canned green peas - 50 g
  • dried basil - a pinch
  • salt and pepper peas
Cooking:
  1. Finely chopped cabbage. I thoroughly wash the carrots and pass them through the grater.
  2. Finely chop the onion, wash the potatoes, peel and cut into squares. I crush or rub garlic.
  3. I send the onions with carrots to the pan and fry until cooked.
  4. I pour the meat broth into the pan, add the potatoes and boil for about a quarter of an hour.
  5. Add pasta and fried vegetables. Mix and cook for about 5 minutes.
  6. At the end of cooking, add green peas, peppers, garlic, basil and salt. Mix thoroughly, salt and keep on gas for a couple of minutes.
  7. Pour the finished soup into plates, decorate with fresh herbs and serve.

At first glance, the dish may seem a little strange, because canned peas in the soup are very rare. However, it is worth tasting one spoonful of refreshments in order to understand how tasty it is.

How to cook soup without meat

Soup without meat is ideal for people who are on a diet or fasting. It is believed that vegetable soups are less tasty than cooked on the basis of meat broth. I do not think so. Remember, for example, milk or mushroom soup. Each of these dishes is not inferior to meat.
